Chef Anthony Martin specializes in a few caviar dishes at this Michelin-starred Chicago eatery – and one that defies gravity is the Levitating Amuse Golden Potato Chip with Crème Fraiche and Reserve Kaluga Caviar. Why didn’t anyone think of putting caviar on a thick-ridged salty chip before? It’s the yin and yang of taste-bud stimulation and you will want to eat dozens of these, not just one. After several years, Hotel Bel Air Restaurant has reopened with a new design by renowned architect David Rockwell. While the dining room is sexy and romantic at night, alfresco or by the fire, there is nothing like breakfast in bed – especially when your chef is Wolfgang Puck. “The Breakfast Escape” includes one ounce of Ossetra Caviar served with toasted brioche and crème fraiche along with an Onsen Egg with soft Parmesan polenta and black truffle mascarpone emulsion. For the sweet tooth, Seacrest strawberries with warm Vahlrona chocolate ganache, buttermilk short bread and whipped cream pair well with the Henriot “Souverain,” Brut Reims Champagne. And, for those in the know, Puck keeps a large stock of Caviar California White Sturgeon and Russian Imperial Caviar on tap but you must ask for it off the menu.

It’s so popular, they have installed an outlet inside Harrod’s department store in Knightsbridge and walk-up seafood bars at several Heathrow airport terminals. Choose from Imperial, New York, Oscietra or Royal Black whether you’re having a full meal, snack or just picking up a gift to go, you’ll want to savor the experience. Don’t miss the oysters or melt-in-your-mouth Balik salmon while you’re quaffing away.

While you’re staying at this opulent hotel over-looking Red Square in Moscow, add the Tsar’s Breakfast to your million dollar view. Start your day like royalty with Beluga caviar and a bottle of Cristal Roederer Champagne. An impressive selection of champagnes are also available including Dom Perignon but they also recommend a Cloudy Bay Sauvignon Blanc from New Zealand; Jyunmai Ginjyo sake or Gold Line vodka to enhance the experience.
